Balsamic Dressing

This is my primary dressing that I use in my salads and it's so much more nutritious than most store bought varieties that are primarily soybean oil. It's so good that even my 5 year old daughter loves salads as long as there is dressing on it. The most important thing for this dressing is to use the thickest highest quality balsamic vinegar you can find as the dressing will not just run off and will settle on the greens.

 

 

Ingredients

 

1 cup balsamic vinegar

1 cup extra virgin olive oil

1 tablespoon dijon mustard (or more if you like)

1 tablespoon honey (optional...but my wife likes it sweet)

 

You can scale up this recipe but keep the general portions the same. I use a mason jar and simply fill up with 1/2 olive oil and 1/2 the balsamic vinegar and visually look instead of measuring. Shake well and your ready to serve.
