Learning the many ways vegetables can be prepared in the kitchen encourages a healthy and tasty diet. The more we can learn about each vegetable and the techniques for preparing them add more to our culinary palate. I strongly encourage everyone to experiement and try everything and see what you and your family like most. Enjoy!

Kale

Kale is a staple in the vegetable world. We grow curly kale and it's picked the morning you receive your package. Kale is so versatile and can be put in almost anything. The nutritional qualities are unmatched and there are so many benefits to this amazing cruciferous vegetable.

Kale Chips

Beet Spinach

Beet spinach is another outstanding green that will go well in almost any recipe. It's full of vitamins and minerals. Include this tender green in any sauce, soup, curry, stir fry or stew. This is an excellent green to sneak in everything that will provide an extra nutritional boost.

Carrots

Carrots are also a staple and with my deep clay soil they grow well and are so much more tasty than the commercial varieties you find at the grocery.

Lettuce

Lettuce is the essential base of salads and you'll get it freshly picked very early in the morning, often before the sun rises when it's at it's peak. We are now offering a special variety called Salanova that is very unique as it doesn't require any cutting of individua leaves. Simply cut out the core and you have an instant bowl of salad greens ready to serve. Try my amazing salad dressing recipe.

Beets

Summer Squash

Beets are a unique source of phytonutrients called betalains that protect against many diseases. Though not everyone appreciates this often overlooked vegetable there are many ways to prepare this delicious and nutritous root. Try slicing it thinly and spreading over your salads for a sweet addition.

Summer Squash, although not always available it is an abundant addition to your weekly provisions and is extremely versatile in how you can prepare it. Whether raw, steamed or fried there are so many ways. The one thing about it for me is that I never like it overcooked as that reduces the flavor and nutrients becoming soft.

 

Green Beans

Green beans are also such a healthy addition to the diet. They are great for your gut and promote it's health. We grow a french variety that is full of flavor and very tender.
