Eggplant

 

Eggplant is one of those veggies that take a little learning. What I find most appetizing with eggplant is roasted. My favorite recipe is a roasted veggie dip. Roast chopped eggplant, chopped onion, garlic, red peppers with about 2 tablespoons olive oil for about 30-40 mins or until it's golden and caramelizing. Take out of oven and blend with salt and pepper to taste or puree and it's month watering. Also another eggplant dip is Baba Ganoush,a middle eastern appetizer. Also eggplant Parmesan is a classic, It's great in curries. But roasting it is best in my opinion
